For years, my party go-to has been Sheldon Simeon’s pan sushi dynamite, a recipe from his excellent cookbook, “Cook Real Hawai’i.” Pan sushi — or sushi bake — never fails to delight. It’s a generous sheet of sushi rice topped with fish that has been baked just long enough to marry with its sauce, placed on the table with palm-size squares of nori for D.I.Y. Naz’s recipe has the same sushi-casserole heart, but with California roll vibes. Imitation crab is mixed with cream cheese, mayo and Sriracha, baked on vinegary sushi rice, showered with furikake and topped with sliced cucumber and avocado. Naz notes that you can use canned tuna or salmon (or, indeed, real crab) instead; I can confidently confirm that sushi bake is a great use of canned salmon.

Huy Fong Foods, the creator of Sriracha chili sauce, announced a shortage in 2022. In 2022, the Irwindale, California, company that created the sauce, Huy Fong Foods, notified customers that a "severe" chili pepper shortage was disrupting its production line. Since then, grocery stores and restaurants have been having difficulty keeping a reserve of the beloved hot chili sauce, causing third-party sellers to mark up prices. Underwood Ranches owner Craig Underwood filed a cross-complaint shortly after in 2018, claiming that Huy Fong breached its contract and committed fraud. A spokesperson for Huy Fong Foods did not respond to a request for comment sent during the weekend.

The sauce opens the richness of a pho broth or adds a blast of heat to a banh xeo, a Vietnamese crepe. Sriracha can “really hit the sweet spot in terms of spice, sweetness, acidity, just that tang.”But a few months ago, supply began to dry up. So he, like some other Huy Fong enthusiasts, bought two large bottles on eBay for $35 each, about five times the usual price, to use at home. BANGKOK, Jan 12 (Reuters) - ExxonMobil (XOM.N) has agreed to sell its two-thirds stake in Esso Thailand (ESSO.BK) to Thai energy firm Bangchak Corporation (BCP.BK), the companies said in separate statements, in a deal that values the shares at 20.1 billion baht ($603 million). ExxonMobil said it would "continue to supply the Thailand market with branded finished lubricants and chemical products through a new company to be formed." Bangchak said it would initially acquire ExxonMobil's 65.99% of Esso Thailand and then launch a tender offer for remaining shares, held mainly by institutional funds. Bangchak said it would purchase 2,283,750,000 shares of Esso Thailand (ESSO.BK) at an indicative price of 8.84 baht per share. "This investment is a step towards greater energy security, balancing our long-term strategy," said Bangchak chief executive Chaiwat Kovavisarach.
